Bonne Manan Recipes Almond Crêpe with Plums in Thyme and Blackcurrant Syrup (Serves 4)

These crêpes make an ideal mild dessert to ned any particular meal and the wealthy and sticky syrup offers it an actual fruity kick.

Extravagant, fruity crêpes make an ideal mild dessert

Preparation Time: 20 minutes; Cooking time: 20 minutes

Elements:

For the plums in syrup:

6 tbsp Bonne Maman Blackcurrant PreserveJuice of 1 orange2 degree tbsp mild smooth brown sugar

A teaspoon of contemporary thyme leaves, tied in muslin150ml crimson wine

250g small plums, halved and stoned

For the crêpes:

150g toasted, flaked almonds

Batter:

50g melted butter, plus additional for cooking100g plain flour1 massive egg and 1 egg yolk300ml milk

1 tbsp caster sugar

For the filling:

200ml mascarpone cheese150ml double cream1 degree tsp orange zest

Icing sugar, to mud

Methodology:

  1. Simmer all of the plum elements collectively for 10-12min or till the plums are simply tender.
  2. Whisk collectively the batter elements with 50ml chilly water. Warmth an 18-20cm crepe pan and brush calmly with melted butter.
  3. Sprinkle 1tbsp almonds into the pan then pour in 50-60ml of batter. Tilt the pan in order that the batter runs everywhere in the floor.
  4. Cook dinner for 1min till the underside is golden, flip over and cook dinner for an extra 1min. Tip on to a plate. Proceed till you may have used all of the batter.
  5. Stir collectively the filling elements, unfold over the pancakes and roll up. Mud with icing sugar and serve with the nice and cozy plums.
